Pinot Noir
Pinot Noir is an excellent wine choice when you are not quite sure what to drink. The wine's versatility can complement many dishes. The wine produced from the pinot noir grape is enjoyed today in the same way as it was during the time of the Romans.
Pinot Noir grapes tend to create a lighter coloured wine than that of the full-bodied reds. This lightness, delicacy and subtlety are what attract many people to its complexity and flavours. It has a silky soft texture, making it an excellent wine for both new and connoisseur red wine drinkers.
We wish to present our noble pinot noir wines as a focus on texture and aroma. This wine style embraces the old world and new world styles. A pinot noir of complexity, earthy and forest floor nuances with a subtle to significant fruit driven finish. It is a slightly fuller bodied wine than the old world style and has a restrained silky and velvety full palate throughout.
Care is taken with the choice of the oak, designed to add structural and sensory nuances to the wine. Because of the delicacy of the grape, the oak should not dominate the wine. The oak is of French origin, from central France and is an important element in both the sensory and structural aspects of the wine, however due to the delicacy of the pinot noir grape care must be taken to ensure that it doesn't dominate the wine.
MONS RUBRA Pinot Noir is a wine created in the Burgundian style and is of translucent ruby red colour. It was made to be soft, supple and medium bodied with subtle aromas of cherry, raspberry and strawberry, unfolding into a cedar and earthy forest floor character. The taste is of velvety fruit throughout the palate, which is light to medium
embodied with fine silky tannins, good acid and superb length and persistence. If left to mature it will be earthy and full bodied.

Our 2004 Mons Rubra sparkling wine has been created in the methode traditionelle style of the Champagne region of Epernay in France where pinot clones are fermented into stunning sparkling wines without the need for adding chardonnay grapes for enhancement. 100% pinot grapes grown from the ancient MV6 clone, this well balanced sparkling pinot is full bodied, creamy and rich and fills the palate with subtle layers of fruit.
Mons Rubra sparkling pinot noir has a perfect balance of the pinot noir grapes having been hand pressed and barrel aged in new French oak before tirage bottling and ageing on lees. It is an elegant, balanced and complex sparkling with a delicate flavour. Intensely aromatic with notes of cherry and raspberries and followed up by an understated elegance which drives the fruit towards a long and lingering finish.
With stunningly fine beads and a delightfully smooth finish it has developed into a wine both fascinating and rare!

2004 Mons Rubra Methode Traditionelle
This 100% Pinot Noir sparkling was hand pressed, barrel aged in new French oak before tirage bottling and ageing on lees for six years. It is golden in colour with persistent mousse and a super fine bead. It has beautiful yeast complexity including toasted nuts. Demonstrating complex fruit - citrus through to mandarin and following through to the elegant and persistent palate. It finishes with a line of firm but appealing acidity.

2014 Vintage Pinot Noir
This is a bright crimson in colour and displays elegant aromas of cherry fruit, fresh red apples, spicy and earthy characters. These follow through on to the palate which has chalky, fine tannins and fresh acidity in appealing balance. While drinking well now it will improve over the next 4 – 6 years
Price: SOLD OUT Campbell Mattinson’s review in January this year stated: “Mons Meg is a famous canon at Edinburgh Castle. Just one of those things that spring to mind. Balls of iron. Cool and fragrant, with a distinct herbal note offering sage and gum leaf, subtle smokiness, red fruits and light spicy oak. It’s light to medium bodied, built on bright acidity, but carries a modest amount of fine dusty tannin too. Long and tangy finish, with pleasant herbal notes carrying into the aftertaste. It’s kind of tense, and bony, and herbal, but full of character and interest.” |
2015 Vintage Pinot Noir
2015 was a relatively warm season for the Macedon Ranges, and it’s the warmer ones that tend to be the better here. This wine show sweet, lifter aromatics and strawberry, raspberry and cherry with mushroom and earth characters sitting underneath. This follow onto the palate which shows a remarkable line of acidity with firm yet fine tannins which flow through to the long finish.

Rated 95 points. 10% whole bunches at the bottom of the fermenter with destemmed fruit on top (whole berries, not crushed), matured in French oak (50% new) for 12 months, 400 dozen made. Very light colour, although the hue is bright; spice and forest nuances underlie the red fruits of the bouquet, in turn faithfully replayed on the seductively silky palate and long finish. Sensitive winemaking of fruit with low level of tannins. Arguably will never be better than it is today, although, of course, it will change with age. |
